No Bake Nutella Truffles

Readers, I’m on baking form this weekend. Or as the case may be – non baking form. It’s been a fairly quiet weekend in our household. The weekend before payday usually is!

I had a few random ingredients kicking about the house and as you all know, Nutella is a particular weak spot of mine.  To resist temptation and the need to grab a spoon and wire in straight from the jar, I’ve created an oh-so-easy truffle recipe that’s great to curb a sweet craving or to hand out with coffee after dinner.  This made 18 truffles – I deliberately made them chocolate truffle sized.  You’ll get a nice little sweet kick without feeling like you’ve massively overindulged in a huge chocolate bar.

These are no bake, so great to get the kids involved.

Easy No Bake Nutella Truffles 

Ingredients (makes 18 small truffles)

2 tablespoons Nutella
8 digestive biscuits
1 teaspoon vanilla essence
2 teaspoons low fat cream cheese
1 pack Silver Spoon Milk Chocolate Chips
Hundreds & Thousands to decorate


  1. Break the biscuits into quarters and add to a food processor.  Add the Nutella, vanilla essence and cream cheese to the food processor.  Whizz until the ingredients mix together and start to form a dough-like substance.

  2. Remove from the processor and transfer to a bowl. Bring the mix together with your hands if need be. 

  3. One the mix has reached the desired consistency, break off small pieces and roll into balls.  Transfer to a baking sheet lined with greaseproof paper.  Once you have 18 truffles, transfer to the fridge to chill and harden (around 1 hour in a fridge around 3 degrees celcius).
  4. Add the chocolate chips to a microwave proof bowl and melt in the microwave for 60 seconds followed by 10 second blasts if it’s not quite a liquid consistency.  I used a whole packet to cover 18 truffles. 
  5. Dip each of the chocolate truffles into the bowl (I used a teaspoon and swirled them around).  Remove from chocolate, allow any excess to drip off then transfer back to the baking tray.  Sprinkle hundreds and thousands on top of each whilst the chocolate is still a liquid consistency.

  6. Once each truffle is coated and finished, return to the fridge to set.  Truffles should be ready to eat within 30 minutes.  Store in the fridge until ready to serve.   Truffles should keep in an airtight container for 2-3 working days.

Glasgow Living Part 4 – Shawlands Brunch, Lunch and Munch

Readers, I’ve been quiet on the baking front recently.  I’ve got a few more healthy recipes to give a whirl but the last few weekends have been really busy.

Anyway, it’s been a while since I wrote a Glasgow Living piece, so I thought it was time for a round up.  The last 7 months have given us a great chance to eat our way around the area and Shawlands is great for a quick brunch or munch with friends and family.  We made a rule to try and go somewhere new each time, but have fast developed a few favourites in the neighbourhood which I wanted to share with you all.  Here’s my top 5 spots for daytime eating in the Shawlands area.

 The one to take your loved one… Bell & Felix, Kilmarnock Road

With it’s black and silver frontage and laid back lighting it’s a great spot for Sunday brunch with someone special.  The menu is vast, coffee is good and the Stornoway stack (that’s black pudding and a poached egg in case you were wondering) come highly recommended from Mr WhatClaireBaked.

The one for the gluten free person in your life… The Glad Café,Pollockshaws Road

The Glad Café can easily swap standard bread/rolls and other baked goods for a gluten free person.  Coeliac friend was delighted when we went along for brunch and she was able to enjoy maple and bacon gluten free French toast.  Top tip – go early on a weekend.  It’s a real mix of hipsters and families – arrive too late and you’ll be queuing for a table.

The one to take your parents to… The McMillan, Pollockshaws Road

The McMillan Bar and Chop House is also a handy 10 minute walk from our place.  It’s a great shout to take the parents to – good wholesome food without being fancy.  The sort of place that your Dad won’t need to ask you to translate the menu for him.   A two course lunch on the market menu will set you back £10.95 per person – great value for the standard of cuisine served. Last week, 3 out 4 of us went for the sausage and mash option for a main.  Worth it!

The one for cake and coffee… D’nisi, Kilmarnock Road

Also handily located near to our pad, D’nisi does a great coffee and cake – I’m fairly sure last time I was in, they were doing a deal for a hot drink and a rather lovely traybake. There’s also soup and sandwiches for those who are a looking for a bit more sustenance.   Also, take a few minutes to spot the posters in the windows. Scotland’s Scontrepreneurs is a particular favourite.

The one that’s special to us…  Eat Café, Kilmarnock Road

The morning after the first night in the pad, when the décor didn’t match and we were living out of boxes without a working fridge, we took ourselves along Kilmarnock Road to check out the local area. Eat Café looked appealing, was fairly busy and seemed a safe bet.  Again, there was a mix of yummies, mummies, the odd retired couple and us, in the middle of it all, wondering what we’d stepped into. Needless to say, the mix of ages and characters has become one of the plus points of living here.  Back to the food – the sandwiches were good and whilst I have very few memories of the food I ate that August lunchtime, I remember feeling like Shawlands would be a great place to be based.
